Soulever Chocolates

I began Soulever Chocolates in Seattle, WA, in January 2014. The premise was Organic, Low Glycemic, Vegan and Dairy Free, Soy and Gluten Free truffles, caramels, drinking chocolate and bark. I have since expanded into teaching chocolate making classes, as well as consulting and teaching new companies the process of chocolate making. You'll find my chocolates and chocolate desserts as options on my dessert menus. I also return to creating packaged chocolates in the cooler months, and am able to ship as well. Intro: Learn about the history and uses of tempering, modern tempering methods, and make your own chocolate bark. (45min-1.25 hrs)(need 2 hours to prepare onsite)

Beginner: Learn about the history and uses of tempering, modern tempering methods, the process of bean to truffle, and make your own chocolate bark and hand dipped truffles. (2-2.5hrs)(need 2 hours to prepare onsite)

Intermediate: Learn about the history and uses of tempering, modern tempering methods, and make your own chocolate bark. Learn how to make two types of dairy free ganaches, followed by hand dipping in tempered chocolate. (3-3.5 hrs)(need 2.5 hours to prepare onsite)

More Advanced: Learn how to make two types of molded chocolate covered, dairy free caramels using honey, coconut nectar and coconut sugar, and additionally making your own custom chocolate bark. (3.5-4 hrs)(need 2.5 hours to prepare onsite)

Even More Advanced: Learn how to make one type of ganache, and one type of molded chocolate covered, dairy free caramel using honey, coconut nectar and coconut sugar. We will finish by hand dipping the gananches in tempered chocolate, and making your own custom bark. (3.5-4 hrs)(need 2.5 hours to prepare onsite)
